Bourbon Peach Galette

This Bourbon Peach Galette recipe is shockingly easy while impressive enough for holiday brunch guests.

  • 1 (15 oz) package refrigerated pie crusts
  • 1 can (21 oz) Lucky Leaf Premium Peach Fruit Filling
  • 1 oz (2 Tbsp), bourbon*
  • 1/2 Tbsp. brown sugar
  • 1 tsp. ground cinnamon, plus additional for garnish
  • 1 egg, lightly beaten
  • course sugar (for sprinkling)
  • 2 Tbsp. caramel topping (for topping)
  • 1 cup vanilla ice cream (for topping)

  1. Step 1
Preheat the oven to 400°F. Let pie crusts stand at room temperature for 15 minutes. Meanwhile, line a large baking sheet with parchment paper. Unroll crusts. Place on a prepared baking sheet; set aside.

  2. Step 2
In a medium bowl stir together LUCKY LEAF Premium Peach Fruit Filling, bourbon,* brown sugar, and 1 teaspoon cinnamon. Spoon half of the filling onto the center of each pie crust, leaving a 2-inch border. Fold edges of pie crusts over filling, pleating as necessary, leaving the center of filling exposed. Brush the edges of the crust with the beaten egg (you won't need it all) and sprinkle the crust with coarse sugar.

  3. Step 3
Bake for 25-30 minutes or until filling is bubbly and crust is golden, covering loosely with foil the last 10 minutes of baking time to prevent overbrowning. Remove and cool on a baking sheet for 30 minutes.

  4. Step 4
When ready to serve, cut the galettes into wedges, and serve slightly warm topped with ice cream, a drizzle of caramel, and a sprinkle of cinnamon.

*Bourbon can be substituted for a mix of 1 teaspoon almond extract and 1 teaspoon vanilla extract
