Apple Walnut Cake

A moist, lightly spiced cake loaded with walnuts and chunks of apples. Easy and delicious recipe!

Ingredients

  • 1 box (15.25 oz) Spice Cake Mix
  • 1 can (21 oz) Lucky Leaf Premium Apple Fruit Filling
  • 2 large eggs
  • 1 Tbsp. pure vanilla extract
  • 1/4 cup milk
  • 1/4 cup tightly packed brown sugar
  • 1 tsp. ground cinnamon
  • 1/2 cup finely chopped Diamond of California Walnuts
  • 1 container (8 oz) frozen whipped topping, thawed
  • Topping - additional shelled walnuts, coarsely chopped

Directions

  1. Step 1
    PREP - Preheat the oven to 350 degrees F. Line a 9x13-inch pan with parchment paper and lightly greased with cooking spray. Set aside.

  2. Step 2
    CAKE - In a large bowl combine the dry cake mix, apple filling, eggs, vanilla and milk. Beat with a hand mixer on low speed for 2 minutes (batter will be very thick). Using a spatula, spread half of the batter in the prepared pan and smooth in one even layer.

  3. Step 3
    WALNUT CINNAMON-SUGAR - In a small bowl combine the brown sugar, cinnamon, and finely chopped walnuts. Sprinkle half of the mixture on top of the batter. Add remaining batter on top. Sprinkle remaining walnut mixture on top.

  4. Step 4
    BAKE - Bake cake for 28-33 minutes or until a toothpick when inserted into the center comes out clean. Let cake fully cool at room temperature, about 1 hour.

  5. Step 5
    FROST - Smooth thawed whipped topping over cake. Sprinkle with walnut pieces. Cut into pieces and enjoy!
