Peanut Butter Mini Cakes with Strawberry Buttercream

A delightful treat that combines the rich, nutty flavor of peanut butter with the sweet, fruity taste of strawberry fruit filling. These Peanut Butter Mini Cakes with Strawberry Buttercream are the perfect indulgence for any occasion.

Ingredients

Mini Cakes

  • 1/2 cup canola oil
  • 1 cup light brown sugar, packed
  • 2 eggs
  • 1 Tbsp. vanilla bean paste
  • 1/2 cup creamy peanut butter
  • 1/4 cup sour cream
  • 1/2 cup half and half
  • 1/2 tsp. salt
  • 1/2 tsp. baking soda
  • 1 1/2 cups all purpose flour

Strawberry Buttercream

Directions

Mini Cakes

  1. Step 1
    Preheat your oven to 350 degrees. You will need a sheet pan to place the mini cakes on when baking. set it aside while you make the cakes. Mini cake liners can be purchased online.

  2. Step 2
    In the bowl of your stand mixer, mix together the oil, eggs, sugar and vanilla. Add in the half and half and sour cream and mix well. Now add in the peanut butter and mix until combined. Add in the flour, baking soda and salt and mix just until combined. Do not over mix or the cakes will be rubbery.

  3. Step 3
    Using a large ice cream scoop, place the batter in each paper liner. They should be a little over 3/4 full. Tap the pan on the counter so that the batter is smooth and flat on top. Place all 8 cakes on one pan spacing them apart.

  4. Step 4
    Bake for 16-18 minutes, or until they are a light golden brown. Let cool for 15 minutes, then place them in the fridge while you make the strawberry buttercream.

Strawberry Buttercream

  1. Step 1
    Whip the butter until light and fluffy. Add in the strawberry fruit filling and whip until the pieces of strawberry are broken down.

  2. Step 2
    Slowly add in the 4 cups of confectioners sugar and beat until light and fluffy. Mix in the pinch of salt.

  3. Step 3
    Pipe on a ring of frosting around the cakes and carefully spoon on some of the remaining strawberry fruit filling in the center of the ring of frosting.
