Ingredients

Crust

  • 1 11 - ounce box of Vanilla wafer cookies (~80 cookies), crushed
  • 8 Tablespoons melted, unsalted butter

No - Bake Cheesecake Layer

  • 12 ounces very soft cream cheese, room temperature
  • 3 Tablespoons sour cream
  • 1/3 cup white granulated sugar
  • 2 teaspoons fresh lemon juice
  • 3 Tablespoons confectioners ’ sugar
  • 1 lemon's worth of lemon zest
  • 1 teaspoon vanilla

Fruit Filling Layer

Whipped Topping Layer

  • 3 cups of heavy whipping cream, co
  • 3/4 cup confectioners ’ suga

Directions

To Make the Whipped Topping Layer

  1. Step 1
    In a large, very cold bowl, add the whipping cream and confectioners’ sugar.

  2. Step 2
    Using a wire whisk attachment on a stand or hand-held mixer, whip together the ingredients starting on low speed and increasing to high slowly as it starts to firm up

  3. Step 3
    Scrape down the sides as needed.

  4. Step 4
    Beat for roughly 60-90 seconds or until stiff peak forms

  5. Step 5
    When stiff peaks form, place the bowl into the refrigerator.

To Make the Crust

  1. Step 1
    Place the crushed wafer cookies and melted butter into a bowl and, with a fork, mix until all of the crumbs are coated.

  2. Step 2
    Dump the mixture into a glass or ceramic 9x13 pan and press the mixture down to form an even layer on the bottom of the pan.

  3. Step 3
    Place in the refrigerator to chill while you make the Cheesecake layer.

To Make the No - Bake Cheesecake Layer

  1. Step 1
    In a bowl add the softened cream cheese, sour cream, and granulated sugar.

  2. Step 2
    Beat to combine until smooth and creamy scraping down the sides as necessary.

  3. Step 3
    Add in the rest of the ingredients and beat until light, creamy, and fluffy.

To Assemble the Lemon Delight

  1. Step 1
    Remove the 9x13” pan from the fridge and spoon on the layer of No-Bake Cheesecake.

  2. Step 2
    Spread into an even layer.

  3. Step 3
    Add both cans of Lucky Leaf Lemon Fruit Filling or Topping over top and carefully spread out into an even layer.

  4. Step 4
    Remove the whipped topping from the fridge and spread that out over top.

  5. Step 5
    Place, uncovered in the fridge for a minimum of 3 hours.

  6. Step 6
    To serve, use a warm, sharp knife to slice and a thin-blade spatula to remove the pieces.

  7. Step 7
    Store the leftovers in the fridge, covered.
