Chocolate Covered Strawberry Pie

Ingredients

  • 30 chocolate sandwich cookies
  • 6 Tbsp. unsalted butter, melted
  • 1 jar hot fudge sauce, heated
  • 1 (21 oz.) can of Lucky Leaf Strawberry Fruit Filling
  • 1 (8 oz.) cream cheese, softened
  • 1/3 cup powdered sugar
  • 1 tsp. vanilla extract
  • 1 cup cold heavy cream
  • Shaved chocolate, sliced strawberries and whipped cream for topping

Directions

  1. Step 1
    Pulse the cookies in a food processor until crumbled. Pour into a bowl, add the melted butter and mix together. Pour into a springform pan or pie dish and use the bottom of a measuring cup to evenly smooth out the bottom.

  2. Step 2
    Pour over the heated fudge and spread evenly over the bottom. Refrigerate 30 minutes.

  3. Step 3
    Prepare the filling: Whip the cream and vanilla together until peaks form- 5-7 minutes. In a separate bowl cream together the cream cheese and powdered sugar. Add in the whipped cream and mix together until combined.

  4. Step 4
    Fold in the Lucky Leaf fruit filling. Add the filling on top of the hot fudge layer and smooth out. Refrigerate at least 6 hours.

  5. Step 5
    Cut into slices. Garnish with fresh strawberries, dollops of whipped cream and shaved chocolate.
