Apple Cake stuffed with Cherries

The perfect harmony of flavors with this delectable Apple Cake, where moist and flavorful layers of applesauce-infused cake stuffed with luscious cherry fruit filling. Each bite is a symphony of textures and tastes, as the tender cake melts in your mouth, complemented by the juicy bursts of sweet cherries.

Ingredients

  • 1/2 cup unsalted butter, softened
  • 2/3 cup monk fruit
  • 1/3 cup avocado oil
  • 4 eggs
  • 1/2 cup milk (mix juice from half a lime)
  • 1/2 cup Musselman's Unsweetened Apple Sauce
  • 2 1/4 cups whole wheat flour
  • 1/4 cup cornstarch
  • 2 tsp. baking powder
  • 1 (21 oz) can of Lucky Leaf Cherry Fruit Filling

Directions

  1. Step 1
    Preheat oven to 350 degrees. Grease a 6x6 baking pan.

  2. Step 2
    In a mixing bowl, beat together the butter and sweetener until well combined. Add the oil and eggs and beat again. Once well combined add the milk, apple sauce and blend.

  3. Step 3
    Add flour, cornstarch and baking powder and mix careful not to overmix.

  4. Step 4
    Pour half the batter into the greased baking pan and spread it out into an even layer. Top with a full can of Cherry Fruit Filling. Place remaining batter on top of cherry layer.

  5. Step 5
    Bake for 45 minutes and let cool. Serve with extra cherry fruit filling on top of cake.
