Strawberry Thumbprint Cookies

Ingredients

  • 1/2 cup butter, softened
  • 2/3 cups sugar, divided
  • 1 egg yolk, room temperature
  • 1/2 tsp. vanilla
  • 1/8 tsp. salt
  • 1 1/4 cups flour
  • 1/2 cup Lucky Leaf Strawberry Fruit Filling
  • 1/4 cup powdered sugar
  • 1-2 tsp. milk

Directions

  1. Step 1
    Using a stand mixer or bowl with a handheld mixer, cream butter and 1/3rd cup of the sugar. Add in the egg yolk, vanilla and salt, mix to combine. Then mix in the flour. Chill your dough in the refrigerator for an hour.

  2. Step 2
    Meanwhile, preheat the oven to 350°F, line two baking sheets with parchment paper.

  3. Step 3
    Using a 1.5 tbsp cookie scoop, measure out the cookies and roll into balls. Roll each ball in the remaining 1/3rd cup sugar and place on baking sheet. Using your thumb or the back of a ½ tbsp measuring spoon, press an indent into each cookie. Fill each indent with ½ tbsp Lucky Leaf Strawberry Fruit Filling. Bake for 15 minutes, or until the cookies are set.

  4. Step 4
    Cool on the pan for five minutes, then move to a cooling rack to cool completely. Combine powdered sugar and milk, drizzle over cookies.
