Cherry Cheesecake Brownie Bits

Ingredients

  • 1 (17-18.4 oz) box brownie mix, prepared
  • 2 (8 oz) blocks cream cheese, softened
  • 1 tsp vanilla extract
  • 1/2 Tbsp. lemon juice
  • 1 cup sugar
  • 1/2 cup sour cream
  • 1 cup cold heavy cream
  • 1 (21 oz.) can Lucky Leaf Cherry Fruit Filling

Directions

  1. Step 1
    Preheat oven to 350°F. Prepare brownie mix according to the package directions. Prepare a mini muffin pan with mini liners or spray with nonstick spray, if metal. If it’s silicone you won’t need to spray it. Add 1/2 tablespoon of brownie batter to each mini muffin cup. Bake 16-20 minutes. Set aside to cool.

  2. Step 2
    Meanwhile prepare the cheesecake filling. In a bowl using an electric mixer whip the cream cheese until smooth. Add the sugar, sour cream, lemon juice, vanilla extract and mix on medium until fluffy, about 3 minutes.

  3. Step 3
    In a separate bowl whip the heavy cream on medium high until peaks form, about 3 minutes. Gently mix together the heavy cream and cream cheese mixture.

  4. Step 4
    Spoon or pipe the cream cheese mixture on top of the cooled brownies. Refrigerate at least 6 hours, or over night. Remove the brownie cheesecake bites to a serving dish. Before serving spoon a small amount of Lucky Leaf cherry pie on top of each cheesecake and serve immediately.
