No-Bake Blueberry Sugar Cookie Truffles

These little truffles contain the perfect blend of sugar cookies and blueberries rolled up into balls of yummy goodness.  It’s the perfect recipe for the holiday season and great to try when you have leftover sugar cookies!

  1. Step 1
    Line a cookie sheet with parchment paper and set aside.

  2. Step 2
    Add your sugar cookies to a food processor. You may need to do this in batches if the entire amount of cookies cannot fit in all at once. Pulse until the cookies are crumbled and transfer to a large bowl.

  3. Step 3
    Next, mix in the cream cheese and carefully fold in the Premium Lucky Leaf Blueberry Fruit Filling or Topping. Be sure not to overmix. Using a cookie scoop, scoop the “dough” into 1 ½ -inch balls. Roll and put on the cookie sheet. Place the truffles into the freezer and freeze for about 15 minutes.

  4. Step 4
    In a large bowl, melt the white chocolate melting wafers by placing them in the microwave and stirring every 30 seconds until melted. Dip the truffles into the melted chocolate. If the white chocolate happens to harden while dipping the truffles, return the chocolate to the microwave for an additional 20 seconds and continue working.

  5. Step 5
    Place the dipped truffles on parchment paper and add a few leftover cookie crumbs or sprinkles for decoration if desired.
