    Preheat oven to 350°F. Roll the thawed puff pastry into a rectangle about ⅛-inch thick.

    Cut the pastry into 24 even squares, about 2 inches wide. Trim edges if needed.

    Grease a mini muffin tin with non-stick cooking spray and gently press one pastry square into each cup.

    Cut the brie into 24 cubes, about 1 inch thick, and place one cube in the center of each pastry cup.

    Bake for 20 minutes, or until the pastry is golden and the cheese is melted and bubbly.

    Garnish with chopped rosemary and let cool for 5 minutes before removing from the muffin tin.
