Preheat oven to 425 degrees. Grease a large baking sheet with non-stick spray and set aside.
Beat together cream cheese, 1 cup sugar and vanilla.
Moisten edges of egg roll wrapper with water.
Spread cream cheese mixture down the middle of the egg roll wrapper.
Stir together fruit filling and apple pie spice.
Top cream cheese with fruit mixture. (You may need to cut apple pieces to fit.)
Fold according to egg roll wrapper directions. Fold as tightly as possible.
Place egg roll on prepared baking sheet and lightly spray with non-stick spray.
Mix together remaining 1/4 cup sugar and cinnamon and sprinkle over top of egg rolls.
Bake 10-15 minutes, or until golden brown.
Remove from oven, and let cool slightly before serving.
To make caramel sauce: Microwave unwrapped caramels and 2 tablespoons heavy whipping cream in a microwave safe bowl in 30 second intervals until melted, stirring every 30 seconds. Add additional tablespoon heavy whipping cream if needed. Serve with apple cheesecake egg rolls.
