Lemon and Raspberry Tarts

Ingredients

  • 1 (11 oz) box of vanilla wafers
  • 5 Tbsp unsalted butter
  • 1 (12 oz) container whipped cream cheese
  • 1 (8 oz) container whipped topping
  • 1 (22 oz.) can of Lucky Leaf Lemon Filling
  • 1 small container fresh raspberries
  • 1 (12 oz.) jar apple jelly for glazed fruit (optional)

Directions

  1. Step 1
    Crush vanilla wafers into crumbs using food processor. Melt butter, mix vanilla wafer crumbs and melted butter. Press into bottom of each individual tart pan.

  2. Step 2
    Using medium size bowl, fold cream cheese, whipped topping and Lucky Leaf Lemon fruit filling together. Once completely blended, fold in approximately 15-20 fresh raspberries.

  3. Step 3
    Add filling to each tart pan. As an option, you can create glazed raspberries to place on top by heating apple jelly in saucepan. Once jelly is melted and in liquid form, brush onto fresh raspberries. Let cool completely and place on top of each tart before serving.
