Preheat oven to 325° F.
Spray a large springform pan with non-stick cooking spray. Set aside.
Combine chocolate chips and butter in large bowl. Microwave using melt directions for amount of chips or microwave in 10 second increments until melted. Stir to combine. When melted, mix in egg yolks, one at a time, stirring after each addition.
While chocolate is melting, add egg whites in bowl of stand mixer and whisk until stiff peaks form. Add sugar and continue whisking until glossy. Note: You can also use hand mixer or whisk by hand.
Gently fold egg whites and cherry pie filing into chocolate mixture.
Pour mixture into prepared pan. Bake approximately 55 minutes or until sides begin to pull away from pan and a toothpick comes out clean.
Garnish with powdered sugar, additional pie filling and mint if desired.
