Blueberry Lemon Cake

  • 1 (15.25 oz.) box yellow cake mix
  • 1 (3.4 oz.) instant lemon pudding mix
  • 4 eggs
  • 1/2 cup sour cream
  • 1 cup club soda
  • 1 (8 oz.) container of whipped topping
  • 1 (21 oz.) can of Lucky Leaf Premium Blueberry Fruit Filling


  1. Step 1
    Preheat the oven to 350 degrees F (175 degrees C). Grease and flour two 9-inch round cake pans.

  2. Step 2
    In a large bowl, combine the cake mix, pudding mix, eggs, sour cream, and club soda. Beat on low speed for 30 seconds, then increase speed to medium and beat for 1 minute, or until well combined.

  3. Step 3
    Pour the batter into the prepared pans and bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

    Allow the cakes to cool completely before assembling frosting.

  5. Step 5
    To assemble the cake, place one cake layer on a serving platter. Spread with a layer of blueberry filling, then top with a layer of whipped topping. Add the top layer.

    Add whipped topping and blueberry filling to the top; serve immediately or chill until ready to serve.
