Preheat oven to 350°
Slice off the tops of the apples, to remove stem end. Carefully scoop out center of each apple, including all the seeds. Make sure to leave at least a 1/8" edge around the apple.
Fill each apple with an even amount of fruit filing.
Prepare the lattice pie crust in the typical fashion, by weaving the dough in a basket weave design.
Using cookie cutter, cut out 4 circles of the weaved pie crust, and place one circle on top of each filled apple.
Brush each crust with egg wash.
Place apples in 9X9 or 9X13 oven safe pan and tent loosely with foil. Bake at 350° for approximately 15 minutes, then remove foil and bake or broil for an additional 5 minutes until crust is golden brown. Watch closely so it doesn't burn.
Top with ice cream or whipped cream and any leftover fruit filling and serve!
